Chef Poncho Cadena and his family are part of a business that offers a wide variety of dishes, from cuts of meat and chicken to seafood preparations. A notable detail is that La Leche was the scene of a kidnapping in 2016, when Iván Archivaldo Guzmán, son of Joaquín 'El Chapo' Guzmán, was abducted while celebrating a birthday.

La Leche, known for its minimalist decoration in white tones, has high prices, with a tasting menu that reaches 1,870 pesos and a cost of up to 2,585 pesos accompanied by drinks. The average consumption per dish is 560 pesos, but some, like the cabrería fillet, can reach 1,210 pesos. The restaurant Hueso, known as the 'workshop of chef Poncho Cadena,' is located in Guadalajara, Jalisco, and opens from Tuesday to Saturday from 7:30 PM to 1 AM.

On the other hand, chef Zahie Téllez, with nearly 20 years of experience in gastronomy, has a restaurant that opens from Monday to Sunday from 6 PM to 10 PM. Hueso, co-founded by chef 'Poncho' Cadena, stands out for having a menu that changes daily and requires reservations on its website. In 2024, this restaurant in Monterrey was recognized by the Michelin Guide.

Additionally, chef Alfonso 'Poncho' Cadena owns three restaurants, including La Leche in Puerto Vallarta, where chefs Zahie Téllez and Adrian Herrera are also found. They will be judges on MasterChef Celebrity 2025, a culinary reality show. Chef Herrera owns La Fonda San Francisco in San José del Cabo, Baja California Sur, specializing in cuts and recognized in the Michelin Guide 2024.

Carbón Cabrón, another restaurant of chef Poncho Cadena, offers grilled meat dishes at an average price of 200 pesos per dish. Chef Zahie Téllez revealed in an interview that she is not looking to have more culinary businesses, prioritizing the freedom to travel and explore the world.
