Guanajuato Leads in Cauliflower Production

In the heart of Mexico, Guanajuato has stood out as a leader in cauliflower production, surpassing all states in the country for more than a decade. In 2024, this state reached an annual output of 30,133 tons of cauliflower, with a value of 190 million 720 thousand pesos, thus consolidating its competitive advantage. Municipalities such as Doctor Mora, Silao, Salamanca, San Luis de la Paz, and Juventino Rosas have been key in the cultivation of this vegetable, becoming an important economic and agricultural engine for the region.

According to the Agricultural and Fisheries Information Service (SIAP), the price paid to producers remained stable during the period, with an average of 6,329 pesos per ton, allowing for an 8.2% increase in production value. In 2012, Guanajuato ranked fourth nationally in cauliflower production with 7,607 tons per year. In addition to supplying the national market, a large part of its production is exported to the United States, Canada, and Japan.

The sustained growth of Guanajuato in cauliflower production has been attributed to a combination of agricultural innovation, favorable climatic conditions, and a state strategy that has boosted productivity. In 2024, farmers sowed 1,865 hectares of cauliflower, taking advantage of the qualities of Guanajuato soil that facilitate its cultivation. This vegetable, rich in vitamins C and B6, as well as essential minerals such as potassium, calcium, and phosphorus, has proven to be versatile in cooking and nutritionally beneficial.

A decade later, Guanajuato has quadrupled its cauliflower production, surpassing states like Puebla and Hidalgo, with consistent leadership, a significant increase in production value, and a prominent presence in key international markets.
