
Restaurant owners in Nuevo León, specialized in fish and seafood, anticipate an increase in their sales during Lent 2025, estimated between 25% and 30% compared to the previous year. This could represent up to 416 million pesos in revenue. With the arrival of Ash Wednesday, one of the most significant seasons for these businesses begins, as the tradition of abstaining from consuming red meat drives the demand for seafood products.
According to Kathia Guajardo Bosque, president of the National Chamber of the Restaurant Industry and Seasoned Foods (Canirac) in Nuevo León, Lent is a crucial period for seafood restaurants in the region. With an expectation of notable sales growth, the 839 establishments in this sector in the state are expected to benefit economically. This projection could result in an economic spillover of between 400 and 416 million pesos, depending on consumer behavior and market conditions.
This increase in sales during Lent reflects the deep-rooted culinary tradition of the region, where the consumption of seafood products rises significantly. However, it also poses logistical and quality challenges for restaurant owners, who have implemented measures to ensure the freshness and safety of food.
To face this season, a training course on food handling was conducted in collaboration with the Ministry of Health. The main goal was to provide businesses with updated tools on food safety protocols and good practices in the restaurant industry.
In 2024, Nuevo León had 21,340 restaurants, of which 744 specialized in seafood, generating an economic spillover of nearly 320 million pesos. For this year, this sector is expected to maintain a positive trend, consolidating its importance in the gastronomic economy of the State.
