Grown in the Sierra Norte in Zacapoaxtla and Xicotepec, this lightly roasted bean seeks to capture the essence of the region and the tradition of the Nahua coffee growers of the highlands of Puebla.
The region has volcanic soil and mesophilic forests that give the coffee notes of cinnamon and candied orange with a high level of sweetness. The ideal conditions for the coffee plant to thrive include a temperature between 17°C and 23°C, high humidity, a diversity of species in the ecosystem, and direct solar protection, thus reducing carbon impact.
According to a sustainability expert, it is crucial to implement regenerative agriculture strategies in Mexico to preserve ecosystems and avoid the use of harmful agrochemicals. This practice helps conserve beneficial organisms to eliminate pests and fertilize, maintaining a natural balance in the crops.
Organic coffee, free from agrochemicals, has become increasingly popular in Mexico, where it is consumed 5 to 6 times a week according to surveys. Its production requires a warm climate, abundant humidity, and a diverse ecosystem that offers protection against adverse elements and pests, thus driving the evolution towards sustainable techniques.
In the Cosoltepec Basin region, on the borders of Puebla and Oaxaca, coffee growers like Pablo José Aco Huerta have adopted sustainable practices for coffee cultivation in collaboration with Starbucks.
